Smoked Peaches & Ice cream

End your summer BBQ on a sweet note with smoked peaches! Top it off with vanilla ice cream and your guests will devour this treat! It’s sure to impress with little effort so you will look like an all star.

I’m the baker of the family and dessert is always on me. Although I love it, sometimes I’m looking for quick and easy! All you need for this one is 5 ingredients and 10 minutes.

We have our smoker fired up most summer nights. It’s nice to switch up the flavor from the usual char we get off the grill. The smoker is perfect for chicken, pork and pretty much anything you can grill! So naturally I had to try a smoked dessert. Butter, brown sugar and cinnamon coat the sweet fruit just right. The peaches are tender and juicy coming off the heat. Paired with creamy vanilla bean ice cream, each bite is the perfect mouthfeel sensation of hot and cold! I like to get a little fancy and garnish with fresh mint for a splash of color!

How to:

Set your smoker to 350°F. Start off with picking out the most plump and juicy peaches! Quarter the peaches and remove the pit. Toss them in melted butter, brown sugar and cinnamon. Smoke peaches 3 minutes each side. Remove from heat and serve them topped with your favorite vanilla ice cream!

Notes:

If you don’t have a smoker you can also grill the peaches. Follow the same instructions for the smoker. You can also swap the peaches for apples or nectarines! I’ve tried them all and each one is a hit!

Healthy Tip:

If you’re looking to cut down the calories, fat or sugar no problem! Top the peaches off with your favorite light ice cream, mine is vanilla halo top!

This dessert has summer written all over it! Impress at your next BBQ with ease!

Ingredients

  • 4 peaches, quartered and pits removed 
  • 1 tablespoon butter, melted 
  • 1 tablespoon brown sugar 
  • ½ teaspoon cinnamon 
  • 2 cups vanilla bean ice cream 
  • Fresh mint for garnish (optional)

Instructions

  1. Heat your smoker to 350°F. In a medium bowl toss the peaches in butter, brown sugar and cinnamon
  2. Place peaches on smoker, skin side down. Cook for 3 min, flip and cook another 3 minutes.
  3. Remove from heat. Divide peaches into 4 individual bowls. Top with vanilla bean ice cream and garnish with fresh mint.
