Pumpkin Spice Overnight Oats

This Pumpkin Spice Overnight Oats recipe is so delicious and a go-to breakfast around here. Packed with fall flavors and good for you ingredients like chia seeds that are rich in antioxidants and omega-3 fatty acids.

Oats of course are the main ingredient and an excellent choice for whole grains, they’re rich in fiber, vitamins and minerals and help keep you full longer. I use One Degree Organic Sprouted Rolled Oats. 

Pumpkin seeds are one of my favorite ingredients not only because they add texture and a little saltiness but they are healthy! I use sprouted pumpkin seeds because they are soaked to activate their full nutrient potential, this also helps with digestion. Sprouted pumpkin seeds are a great source of protein, iron and zinc…an all around healthy snack! I get the Go Raw Sprouted Pumpkin Seeds.

The prep for this overnight oats recipe is so easy, you just throw everything together in a mason jar and let it sit overnight!  This recipe will keep good for about 3 days in the refrigerator. I love to make a big batch then divide it up into servings for the week, this way breakfast is ready to go!

This Pumpkin Spice Overnight Oats recipe is super easy, filling and delicious! A great on-the-go breakfast for the fall season!

Ingredients

  • 1/3 cup oats ( I use sprouted rolled oats, you can also use instant or old fashioned )
  • 1/3 cup original unsweetened almond milk
  • 2 tablespoons canned pumpkin pureé
  • 1/4 teaspoon pumpkin pie spice
  • 1 tablespoon pumpkin seeds
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon maple syrup

Instructions

  1. Mix everything together in a mason jar or glass tupperwear. Seal and let sit overnight or at least 8 hours.
