Peach & Blueberry Salad

This salad is great for lunch, dinner or even as a side dish at a BBQ.  It’s the perfect summer salad recipe! I’ve been making it all summer long and and will be until peach season ends in late September! I love throwing fresh fruit over my greens,  it gives that natural sweetness you don’t typically get with salad. I add some pecans for extra texture and good fat to keep you full! Blue cheese or even feta goes nicely on top and if you want more protein thrown in some chicken breast or grilled shrimp!

Dressing:

This vinegar based dressing goes great with many different salads. It’s a great combo of sweet and acidic. You can use red wine, apple cider or balsamic vinegar! Shake all the ingredients up in a mason jar, it will keep in the fridge for about 3 days.

This peach and blueberry salad is simple, delicious and refreshing! Perfect for summer!

Ingredients

  • 1 large handful fresh spinach
  • 1 large handful baby romaine 
  • 1 small peach, sliced 
  • 1/4 cup fresh blueberries 
  • 1 tablespoon crumbled blue cheese 
  • 1 small handful pecans (or your favorite nut) 
  • sliced grilled chicken breast or shrimp *optional 
  • 2-3 tablespoons of dressing

Dressing:

  • 1.5 tablespoons red wine vinegar (can substitute apple cider or balsamic vinegar) 
  • 1 tablespoon fresh lemon juice 
  • 1 tablespoon extra virgin olive oil 
  • 1 tablespoon honey 
  • 1/2 teaspoon dijon mustard
  • pinch of salt 
  • black pepper to taste
  • 1 tablespoon plain nonfat greek yogurt

Instructions

  1. Mix all salad ingredients in a single serve bowl.
  2. In a small mason jar add all dressing ingredients and shake. Drizzle over salad and toss. Serve immediately or leave dressing on the side.
