Matcha Overnight Oats

Overnight oats are definitely my favorite breakfast, especially on weekdays. I like to make them a few days ahead and store them in the refrigerator. This way my breakfast is ready and waiting when I get home from my morning workout! The prep for this overnight oats recipe is so easy, you just throw everything together in a mason jar and let it sit overnight!  This recipe will keep good for about 3 days in the refrigerator. 

Oats of course are the main ingredient and an excellent choice for whole grains, they’re rich in fiber, vitamins and minerals and help keep you full longer. I use One Degree Organic Sprouted Rolled Oats. 

The flavor combinations are endless when it comes to oatmeal. I’ve always loved matcha lattes and matcha smoothies so I decided to try out matcha overnight oats. I found out, it works and it’s delish! Coconut milk is my goto dairy free milk and has amazing health benefits. It’s rich in antioxidants, has anti-inflammatory properties and helps strengthen the immune system. It also pairs well with matcha so it’s perfect in these matcha overnight oats. You can also use almond or whatever milk you prefer. 

Adding chia seeds to matcha overnight oats is a great way to incorporate more fiber, nutrients and antioxidants into your diet. I also like to add a little honey for natural sweetness and flavor. 

The coconut and matcha in these oats gives off a tropical vibe so I like to top with fruits like mango or kiwi. Blueberries, strawberries, raspberries and blackberries are all delicious fruits to top with as well! Finally I like to add unsweetened coconut flakes to my matcha overnight oats for some added texture and crunch!

Make these easy matcha overnight oats so you can have a delicious and nutritious breakfast on the go!

Ingredients

  • 1/3 cup oats ( I use sprouted rolled oats, you can also use instant or old fashioned )
  • 1/3 cup original unsweetened coconut milk (or milk of choice)
  • ½ teaspoon matcha green tea powder (I use Now Real Tea)
  • 1 teaspoon chia seeds
  • 1 teaspoon honey
  • 1 tablespoon unsweetened coconut flakes
  • Fruit of choice for topping (I like blueberries, mango, kiwi or strawberries)

Instructions

  • Mix everything together in a mason jar or tupperware. Seal and let sit overnight or at least 8 hours. 

*Note- if you’re looking for more protein, you can add a scoop of your favorite protein powder. You’ll need to adjust the milk from ⅓ cup to ½ cup.
