Pumpkin Spice Granola

Fall is here and pumpkin is on everyone’s mind! So naturally I’m taking one of my classic favorites and dressing it up in pumpkin spice! This homemade granola is everything autumn sealed up in a cute little mason jar. It’s packed with warm spices, and clean ingredients that taste amazing! When it comes to flavor this granola brings it to the table! A little salty, a little sweet and a lot of fall spice. It’s seriously so easy to make I don’t think I’ll get store bought ever again! Not to mention it makes your house smell amazing…who needs to waste money on fall scented candles?? Just kidding I still have a house full of pumpkin scented everything….because why not?! Pumpkin Spice Granola makes for the perfect fall gift, whether for a housewarming party, a shower favor or just a girls brunch it won’t disappoint!

Oats of course are the main ingredient and an excellent choice for whole grains, they’re rich in fiber, vitamins and minerals and help keep you full longer. I use organic gluten free sprouted rolled oats. 

Pumpkin seeds are one of my favorite granola ingredients not only because they add texture and a little saltiness but they are healthy! I use sprouted pumpkin seeds because they are soaked to activate their full nutrient potential, this also helps with digestion. Sprouted pumpkin seeds are a great source of protein, iron and zinc…an all around healthy snack! I get the Harvested For You Sprouted Pumpkin Seeds from Costco. 

Nuts are a great addition to granola, I like to use almonds. This superfood is packing protein, antioxidants and heart healthy fats! Another superfood on the ingredient list is avocado oil bringing vitamin E and again lots of healthy fat! I love using this ingredient in cooking and baking because of the subtle flavor. You can also use olive oil if you prefer because the baking temp is low enough.

Pumpkin puree is a must to give us that pumpkin flavor. It is also nutrient dense, low calorie and offers vitamin A and antioxidants! 

Not too sweet! Yes there’s going to be some sugar in this delicious granola because well that’s what helps make it so delicious!! Maple syrup and monk fruit sweetener add the perfect balance of NATURAL sweetness. You can use any sugar you like, I prefer monk fruit sweetener to keep the sugar low. Shredded coconut and raisins are a nice addition for extra texture and flavor. 

Tips:

  • Make your own pumpkin pie spice: If you don’t have pumpkin pie spice you can totally make your own. 4 teaspoons ground cinnamon, 2 teaspoons ground ginger, 1 teaspoons ground cloves, ½ teaspoon ground nutmeg. This will make more than you need so just save it in an airtight container because I promise you’ll want to make this granola again!
  • How to serve: My favorite way to eat this granola is over plain nonfat greek yogurt with a little pumpkin puree and cinnamon. It also goes great over vanilla ice cream! For a delicious breakfast turn it into cereal with almond milk and fresh berries! Or…just simply eat it by the handful! My daughter calls it “cookies” and you know toddlers speak the truth…it’s just that good!
  • Let the granola sit: The key to chunky granola is letting it sit when it comes out of the oven. Wait at least 30 minutes. The longer the better so if you can wait all day, knock yourself out!
  • How to store: Store in an airtight container for 2 to 3 weeks…if you can go that long without eating it all, cuz I can’t! I love to keep it in a mason jar.

Homemade Pumpkin Spice Granola is everything fall packed in a mason jar. It's just what you're missing on your morning yogurt! Not to mention it's full of good for you ingredients!

Ingredients

  • 3 cups organic, sprouted rolled oats (you can also use regular old fashioned oats)
  • 1/2 cup sliced almonds 
  • 1/2 cup raw pumpkin seeds (I prefer sprouted)
  • 1/2 cup shredded unsweetened coconut 
  • 3 tablespoons monk fruit sweetener or coconut sugar 
  • 3/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice 
  • 1 teaspoon cinnamon 
  • 1/4 cup avocado oil
  • 2 tablespoons organic pumpkin puree  
  • 1/4 cup maple syrup 
  • 1 teaspoon vanilla extract 
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 300°F 
  2. In a large bowl combine oats, almonds, pumpkin seeds, coconut, monk fruit sweetener, salt, pumpkin pie spice and cinnamon. In a separate bowl mix oil, pumpkin puree, maple syrup and vanilla. 
  3. Pour the wet ingredients into the dry and mix with a spatula. Spread granola onto 2 baking sheets and flatten with spatula. Bake for 20-25 minutes until golden brown. Stir halfway through, pull granola out of the oven, top with raisins immediately. Let cool completely for at least 45 minutes
