Skinny Hot Chocolate

The holidays are here and I’m ringing them in with a big cup of Skinny Hot Chocolate! It’s so comforting to come in from the cold weather and cozy up with a mug by the fire! It’s that time of year when everyone loves to get into the kitchen spirit and bake homemade goodies! Why not try hot cocoa from scratch? This healthy hot chocolate is the perfect mix of sweet, chocolatey creaminess and not too rich! It’s super easy to throw together, when I first made this I had every ingredient in my pantry already. 

Bonus….this healthy hot chocolate is light in cals, fat and sugar and made with clean ingredients. Of course it doesn’t taste “healthy” which is why we love it so much!  I’ve been practicing my Christmas cookie eating a little too much so this is the perfect way to balance it out! It’s also great for kiddos who have been filling their tummies with lots of extra sweets. I use Organic Raw Cacao powder, it’s got that intensely rich dark chocolate flavor without the added sugar…it’s also a superfoood! Made with Lily’s baking chips, a great substitute for chocolate chips. They are botanically sweetened with stevia and no sugar is added! If you follow my recipes you know I’m a huge fan of Monk fruit sweetener. I prefer Lakanto linked here, I usually get it as Costco, you can also find it at your local grocery store or Amazon! It’s a natural substitute for granulated sugar to keep it low! We love almond milk in our house and the vanilla is nice for some extra flavor. If you prefer whole milk go for it, then you’ll just need to add a dash of vanilla extract!

How To: Add milk to a medium pot and whisk on medium-low heat. Once slightly warmed add cacao powder and monk fruit sweetener (or coconut sugar). Whisk another minute until hot but not boiling. Gradually add in baking chips, continuing to whisk with heat on medium. Once all chips are melted it’s done. Fill up your mug and top with festive favorites like crushed peppermint, whipped cream and marshmallows!

Make Ahead: My husband loves to have this healthy hot chocolate after dinner during the week as a little treat. To save time I make a large batch and store in the fridge for 2-3 days. This way he can just reheat in the microwave whenever he wants!

This Skinny Hot Chocolate is great for the holiday season! Easy to make, and filled with good ingredients!

Ingredients

  • 2 cups vanilla almond milk (or milk of choice)
  • 2 tablespoons unsweetened cacao powder 
  • 2 tablespoons Monk fruit sweetener, I like Lakanto (or coconut sugar)
  • ¼ cup Lily’s semisweet baking chips

Instructions

  1. Add milk to a medium pot and whisk on medium-low heat. Once slightly warmed add cacao powder and monk fruit sweetener (or coconut sugar). Whisk another minute until hot but not boiling.
  2. Gradually add in baking chips, continuing to whisk with heat on medium. Once all chips are melted it’s done.
  3. Fill up your mug and add your favorite toppings like crushed peppermint, whipped cream and marshmallows!
