If your taste buds are anything like mine you love a cafe style chicken salad sandwich. Let’s face it though it’s definitely not the healthiest choice on the menu. That’s why I’ve come up with a lighter spin on the classic that tastes like the real deal!
What’s the secret? GREEK YOGURT! I substitute plain nonfat greek yogurt for mayonnaise because sometimes we want all the taste and none of the guilt!
This tangy, creamy healthy chicken salad makes an appearance almost once a week on our families menu. Why? It’s quick, easy and packed with protein. The best part is there are always leftovers, I like to make a big batch on Monday and pack it up for lunch during the week.
SERVE IT YOUR WAY…
What I love about this dish is that it’s so versatile! For a sandwich, serve it up on your favorite bread or toast. For a low carb lunch throw it over some mixed greens or into a butter lettuce wrap. My husband loves to scoop it up with pretzel crisps for a quick snack! Whichever way you choose to serve you can’t go wrong!
Honestly I usually eat this salad with just a fork, the flavor is so good it does just fine solo! The tart from the granny smith apples, the sweetness from the juicy grapes and a little bite from the red onion, you’ll love it!
A good crunch from the celery is a must! I always check that my celery makes a nice snap sound before I pick it off the shelf.
EASY CLEAN UP IS ALWAYS A BONUS – HERE’S HOW:
- Start with a large bowl that you plan to store the salad in (make sure it has an airtight lid). Add every ingredient in as you go, this way you avoid extra dishes for washing.
- Line a small counter area next to your cutting board with plastic wrap for scraps. Once you’re done simply wrap up the scraps and throw away.

Greek Yogurt Chicken Salad is a family favorite around here. It's the perfect weeknight dinner, leftover lunch or weekend BBQ dish!
Ingredients
- 2 pounds hand pulled chicken breast
- 5 ½ ounces green apple, chopped (about 1 medium apple)
- 4 ounces celery, chopped (about 4 stalks)
- 9 ounces red seedless grapes, quartered (about 1.5 cups)
- 1.5 ounces red onion, chopped (about ⅓ cup)
- ¾ cup nonfat plain greek yogurt
- ¾ teaspoon salt
- ¼ teaspoon garlic powder
- ⅛ teaspoon black pepper
Instructions

In a large bowl pull rotisserie chicken apart into small shreds by hand

Add apple, celery, grapes and red onion to chicken and lightly toss

With a spatula fold in greek yogurt until everything is well coated

Add salt, garlic powder and black pepper, mix.

Place one cup of salad over toast, or mixed greens

Store in refrigerator up to 4 days in an airtight container
